Daqous

Hot sauce of simmered tomatoes with chili and garlic - a recipe related to Peter Polters Episoda 111217 Al Zubarah

Daqous is a hot tomatoe sauce, which is an excellent accompaniment to every type of grilled meat. It is very popular in all countries of the Arabian peninsula. How hot the sauce will be naturally depends on the number and nature of the chilies, you put into it.

Ingredients (for 1 small bowl of sauce)

3 tomatoes, skinned and roughly chopped

3 pods garlic, roughly chopped

1 teaspoon black pepper, ground

2 (or more) dried chillies, deseeded and crumbled

1 teaspoon sugar

½ teaspoon salt

poss. 2 teaspoons olive oil

Preparation

  1. Pass tomatoes, garlic, pepper, chilli, sugar and salt in a mixer.
  2. Let this mixture cook on low fire in a little pan until it gets slightly thicker.
  3. Add salt to taste and, if you want to have it smoother, some olive oil. Serve lukewarm or cold.
